Crepes
Mix 1/ 1/2 cups of sifted flour, 1 tablespoon of sugar, and 1/2 teaspoon of salt in a medium mixing bowl. Next, stir in 1/2 teaspoon vanilla, 2 eggs beaten, and 1 tablespoon of oil. Add 2 cups of milk, 1/4 cup at a time. The mixture should be very thin. Cover and refrigerate until you are ready to use the batter.
Butter a frying pan. Heat on medium until the butter starts to bubble. Pour in 1/4 cup of the batter. Rotate the pan so the batter is spread out in the pan. Cook about 30 seconds and turn over. Cook an additional 20 seconds. Top the crepes with fruit, ice cream, powdered sugar, or enjoy them plain. These are like breakfast pancakes but the version of a French dessert.
